Vegan Meat and Mushroom Stroganoff

I recently came across some new vegan meal ideas and when I saw this, I remembered just how much I loved it back in the day.

I also randomly came across vegan “beef” and “chicken” flavored boullion cubes…

So I decided it was time for me to veganize it!

It is actually pretty simple and easily one of my favorite meals currently.

The Beyond Meat grounds just make it all come together and it is absolutely delicious.

If you are missing it or just want to give something new a try, this is perfect!

Vegan Meat and Mushroom Stroganoff

This makes enough for approximately 2 people with some leftovers.

-1 Box of noodles (I used a little Cavatappi and a little of elbows because I’m weird and like to mix noodles lol)
-Cashew cream (1 cup cashews, 1 cup water or tweak if wanted)
-3+ tablespoons nutritional yeast
-1 cube vegan beef flavored boullion to 2 1/2 cups water (I use this one!:)
-1/2 of ground Beyond meat package
-Garlic or powder
– Oil or vegan butter
-Splash of Temari

1.Start with boiling the water/cooking the noodles if need be.
2. In the meantime, prepare everything else. Chop the onion/garlic, make the cashew cream, prep the oil/Beyond.
3. If you need to cook your vegan grounds first, do that. Set aside. Then, put oil or vegan butter in the pan and cook the onions/garlic/mushrooms.
4. When they are done, pour in your bullion/water. Add the cashew cream. Add the nutritional yeast and garlic powder if you are using it.
5. Keep the heat going and keep stirring as it thickens! You can add some flour to help if you want. Not too much though.
6. Add the vegan meat and splash of temari.
7. Stir thoroughly and keep cooking until it is the desired taste and thickness.
You’re done!
