Meaty and Cheesy Vegan Halloween Stuffed Peppers

I have a couple great Halloween recipes to share, but this is the first one, my vegan Halloween stuffed peppers (dressed up as pumpkins of course).

Yep, even being “meaty and cheesy”.
While this can definitely be wonderful any time of year, getting to carve the peppers as pumpkins is so fun, and so adorable to see!
I was so happy making these. Yeah, I’m weird.
The beauty is that you can make them look any way your heart desires.
Here is how you do it!
Vegan “Meaty and Cheesy” Halloween Stuffed Peppers
This makes approximately 5 typical size bell peppers. Adjust as needed!
What you need:
-Orange and yellow bell peppers (or other colors if you want!)
-1 package of Beyond Meat (or your choice) vegan grounds
-1 to 1 1-2 cups of choice macaroni noodles
-1 ish cups of vegan milk of choice (I always use So Delicious plain coconut for this mac and cheese; no strong coconut flavor)
-Half package (or to your taste) Daiya Vegan cheddar shreds
-Chopped onion to tase
-Garlic to taste
What you do:
-I personally cook everything in a skillet first and then bake in the oven to save time. I do recommend.
-Cook macaroni per directions.
-Add some oil to a hot skillet, and put in chopped onion, garlic, and Beyond Meat grounds.
-When this is done, add in the cooked macaroni noodles, coconut milk, and vegan cheddar.
-Cook on low and stir until all melted and mixed together as a sauce with the rest.
-Preheat your oven to 350 degrees.
-Prepare the peppers by cutting the tops very near the top, cleaning them out, and carving pumpkin faces of your choice!
-Line them on a baking sheet/dish so they are standing up all together, and stuff them with the skillet mixture.
-Into the oven with them, and bake for approximately 30 ish mins, until the peppers and tender and cooked nicely.
-Serve and enjoy.
This really was such an awesome idea, and I was so happy to make these and turn them into a vegan masterpiece.
