Jack O Lantern Vegan Sloppy Joe Pie

Jack O Lantern Vegan Sloppy Joe Pie

We may be well into November now, but it is still pumpkin season right?
No matter the time of year, you can still make this vegan sloppy joe pie, and even decorate it to match the season if you would like!

(since it is November currently, of course I made mine a Jack o Lantern. Hehe)

This is something I first had back when I was younger, and randomly remembered it to veganize.

Yep, it is back to being a favorite.

Not to mention the warm, meaty deliciousness is perfect for heading into fall, enjoying through the cold months, and getting into pie mode.

I’ve seen some pretty awesome pie designs by the way, so just imagine the possibilities with that.
(I’m sure Pinterest will have some amazing inspiration to see)

This vegan sloppy joe pie is another perfect way to enjoy the food side of the seasons, cruelty free.

Jack O Lantern Vegan Sloppy Joe Pie

  • 1 Pkg Beyond Meat Grounds (or similar grounds)
  • 1 Can Sloppy Joe Sauce
  • 1 Pkg Puff Pastry Sheets (you need 2 sheets, some come with 2)
  • Oil
  • Just Egg
  • Extra Veggies (if desired; I used and reccomend corn!)

  • Set the puff pastry out to thaw for a good time so it is ready when you are to put the pie together. Prepare any extra vegetables if using.
  • In a skillet, add some oil and the Beyond Meat grounds in to cook as directed. Add any extra veggies as well.
  • Line a pie pan with one sheet of the puff pastry. (it didn't match up perfectly so I just adjust it as I go)
I also did my pie decoration on a plate before placing it on top. You will probably want to do the same now at this step.
  • Add the can of sloppy joe sauce in to the cooked Beyond Meat.
  • Add the skillet mixture into the pie pan, and once your top sheet is finished, add it on.
  • Make some egg wash using Just Egg and a splash of water or vegan milk. Brush onto the top of the pie. You just need a little bit.
  • Bake for the recommended amount of time for the puff pastry (keeping an eye in case it is done beforehand; it sometimes differs)
  • Take pictures, and then enjoy!

I would love to see your pie creations!
